Cave Mont Blanc the new high-altitude winery

Inaugurated in the Pavillon station on Saturday February 22nd

 Cave Mont Blanc opened its new high-altitude winery at 2,173 meters, at the Pavillon du Mont Fréty. Ten years after the opening of the first winery with a sparkling wine laboratory at the intermediate station, the new concept, designed in collaboration with the renowned architecture studio Giò Forma, was presented. 

At 2,173 meters above sea level, the extraordinary temperature and atmospheric pressure conditions give rise to rare and precious bubbles, unique in their kind. Since 2022, Cave Mont Blanc, in collaboration with the Department of Oenology at the University of Turin, has been studying how the high-altitude environment influences the sparkling wine process, with final results expected by the end of the year. 

Here, the pas dosé sparkling wine “Cuvée des Guides” is produced, a tribute to the mountain and the Courmayeur Alpine Guides. The entire sparkling wine process for this wine takes place at high altitude: the unique altitude, atmospheric pressure, and temperature conditions impart rare and distinctive characteristics to this sparkling wine with extreme bubbles. 

The Pavillon winery has a fascinating history: the journey of the wine from the Morgex cellar, where Europe’s highest vineyards grow, all the way to the intermediate station of Skyway Monte Bianco, where the authentic stories of the mountain Vignerons are celebrated. Cave Mont Blanc is an important cooperative from the upper Aosta Valley, founded in 1983, which today has about 70 members and is the only company in the Aosta Valley producing classic method sparkling wine with controlled designation of origin. 

Skyway Monte Bianco and Cave Mont Blanc have been committed for years to enhancing the territory and heroic mountain viticulture. The new experimental winery at the Pavillon is an invitation to celebrate altitude and push limits, an immersive journey that tells the exceptional story of the “glacier” bubbles, with a central wall made of about 3,000 recycled bottles recovered after use at Skyway Monte Bianco, and the artistic work “lo Blanc di Blanc.” The artwork, created by the iron artist from Morgex Michel Olmi, highlights the summit of Mont Blanc that overlooks the vineyards and contributes to making Cave Mont Blanc wines so unique. 

The works were carried out by two companies from the Aosta Valley: ProjeExpo and Centro della Sicurezza. The aging area has also been completely renovated with the support of Icet Studios, aiming to make it visible to Skynauts and to create a space of silence where bottles rest for 30 months at natural temperature.
